10 Easy kid-approved dinner worthy salads that will fill you up!

Alright, no matter how many times I go grocery shopping I am still perplexed when I think about “whats for dinner tonight?  Actually, the real question is what kid-approved dinner can I get on the table?  The one thing I always do is get fresh produce every week…so check! I have veggies.  Okay now how to use them to make something that we will all eat?  Getting kids on the salad kick isn’t always easy.  My trick is to put things in the salad that are easy for them to pop in their mouth and that they already like to eat.  Once they get a taste of that chickpea lolling around that lime honey vinaigrette.  Slowly but surely they are hooked!  You can always ‘beef up’ (no pun intended…) any of these delectable salads by adding your favorite protein.  Here is a list of kid-approved, dinner worthy salads that are seriously filling!

Chopped salad pizza

Sometimes you want to change it up a bit.  What goes well with a chilled glass of wine…well so MANY things.  This meal is so easy, quick and…delicious!  Oh and it is pizza…  Where was that glass of wine again?  Mmm…enjoy!

Fresh black bean salad

This recipe has black beans, and a pile of fresh veggies in a zesty lime dressing that just really hits the spot.  You can grill a skewer of shrimp and serve up this salad with some salt and lime tortilla chips for the little kids and big kids alike!

Grilled Potato Salad with Almond-Basil Chimichurri and 7-Minute Eggs

You can even add Romaine lettuce cups to make “tacos” out of this salad.  Try adding Greek yogurt as the sour cream topper.  Kids think eating with your fingers is the coolest!

Sweet red strawberries and crisp cucumbers always bring back the nostalgic memories of my childhood.  I would pick strawberries with my grandfather and my grandmother would assemble them into a salad with fresh cucumbers from the garden.  It’s like salad for dessert!  Mmm…delicious.
